They are strong, but sensitive creatures. The opposing argument insists that soy is a poison to avoid.</p> <p class="style2"> Where does the answer lie?  As with most things, we believe it is somewhere in the middle.<br> </p> <p class="style2"><strong>The History of Soy</strong><br> </p> <p class="style2">Soy originated in China and made its way over to America in the mid-1700 s where its primary use was as a source of food for farm animals.  It wasn t until the early 1900 s that soy was grown for human consumption taking up a modest 1.8 million acres of land.  By 1954 this had multiplied to 18.9 million acres.  Today, soybeans are America s third largest crop and up to 90 percent is genetically modified.<br> </p> <p class="style2">In 1999 the FDA approved a health claim for soy, stating that diets low in saturated fat that included 25 grams of soy protein a day may reduce the risk of heart disease.  This skyrocketed soy sales from $300 million to nearly $4 billion per year, and flooded the market with over 2,700 new soy products over the next seven years.  Soy cheese, soy burgers, soy ice cream - you name it and it there was a soy alternative.<br> </p> <p class="style2">Contrary to modern belief, soy is not a staple food for traditional Asian cultures.  Their average daily soy consumption is only about 2 teaspoons per day. This is usually a fermented soy product such as miso, tempeh, natto, or traditionally produced soy sauce.<br> </p> <p class="style2"><strong>The Good</strong><br> </p> <p class="style2">The benefits of soy seem to come from a group of compounds called isoflavones, or phytoestrogens.  These compounds are molecularly similar to estrogen and seem to have mild estrogenic effects on the body  men and women  by binding to the body s own estrogen receptor sites on cells.  This is likely the reason some studies show positive benefits of soy consumption on certain conditions such as menopause and menstrual irregularities.  But these compounds can also create issues in high amounts.<br> </p> <p class="style2"><strong>The Bad</strong><br> </p> <p class="style2">Soy is considered to be one of the top eight allergens, which is something we see clinically all the time.  Soy also naturally contains a number of compounds designed to help it survive in nature.  This is common in the vegetable kingdom  for reasons of survival, many vegetables contain toxins or anti-nutrients as a protective mechanism to prevent being eaten by bugs and animals.<br> </p> <p class="style2">Soy does this in a couple of ways:</p> <ul> <li class="style2">Phytates  block certain minerals from being absorbed (i.e. zinc, magnesium, calcium, iron).  This however, is reduced when consumed with meat, something most soy consumers likely don t do.</li> <li class="style2">Enzyme inhibitors  inhibit protein digestion</li> </ul> <p class="style2">Some of these effects can be diminished through all the processing that soy goes through, but not all.  <br> </p> <p class="style2"><strong>The Ugly</strong><br> </p> <p class="style2">Massive soy consumption can negatively impact the body.  It s been said that two glasses of soy milk a day is enough to disrupt a woman s menstrual cycle.  Soy consumption has also been shown to have a negative impact on thyroid function, nutrient deficiencies, an increase in certain cancers, digestive issues and increased prevalence of asthma.<br> </p> <p class="style2">As previously mentioned, as much as 90 percent of soy is genetically modified.  While some experts praise the technology of genetically modifying food, we are not convinced.  The evolutionary process that takes place over millions of years and makes a living organism what it is today, is abruptly changed when we manipulate its DNA.  For example, if you take a strawberry and inject a portion of a salamander s DNA into it, is it still a strawberry?  It might look like a strawberry and taste like a strawberry, but in our book, it is no longer a strawberry.  (A  strawamander maybe?)<br> </p> <p class="style2"><strong>The Bottom Line</strong><br> </p> <p class="style2">Whereas there are two opposing camps when it comes to soy, we land somewhere in the middle.  How a soy product is processed vastly changes its health impacts.  For generations, Asian cultures have enjoyed <em>fermented</em> soy products, which in small amounts, likely has health-promoting benefits.  Fermented soy products include tempeh, miso, natto and fermented soy sauce. In our opinion, the rest of soy products are garbage and should be avoided.  There is too much conflicting evidence in research and cultural observations tells us that consuming large quantities of unfermented soy products has no place in the human diet. <br> </p> <p class="style2"><strong>Conclusion</strong><br> </p> <p class="style2">There is much more to the soy story  for example, soy is not a complete protein, the manufacturing process of soy increases certain carcinogenic compounds, and many soy foods have very high levels of aluminum. Someone is trying to sell it to me and speaks of it's amazing qualities?&nbsp; They are marketing it with coffee. </em></p> <p class="style2">For some reason, we've had more people trying to sell us gimmicks over the past month than we have in the past year  magnetized water, vitamins that spontaneously remove thyroid cancer, skin cream that erases wrinkles, gadgets that remove stuck emotions& and just when we thought I ve heard it all, we get this question in an email. </p> <p class="style2">Ganoderma lucidum, otherwise known as reishi mushroom, has widespread health benefits, as do many of the medicinal mushrooms. It's use dates back over two thousand years in Traditional Chinese Medicine, and more recently has been used in the treatment of cancer because of its potential immunomodulating and anti-tumor effects. </p> <p class="style2">But, leave it to our current society to take something with a long-standing history and convolute it. We took the spiritual practice of yoga and turned it into &quot;power yoga&quot; and now we take a traditional Chinese medicine and turn it into an energy drink. Perhaps we're just a skeptic  but Ganoderma Coffee? The herb the way it's been originally taken for thousands of years is just fine the way it is.
